Shirazi Recipe
Serves 6
- 1 lb. Persian or English cucumbers
- 1 lb. Roma tomatoes
- 1 small onion (red or white)
- 2 tablespoons flat leaf parsley
- ¼ cup lime juice (about two limes)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon salt
Directions
Dice cucumbers and tomatoes into ¼-inch pieces and set aside in a large bowl. Finely mince onion and chop parsley before adding to vegetable mixture.
Dress salad with lime juice and olive oil. Add salt to taste.
Toss well to combine. Chill salad for one hour to allow flavors to meld.
