For centuries, North Africans have enjoyed fried pastries filled with tuna and egg. Tunisia’s version of this delicious snack, brik, is folded into a triangular shape before frying. Try your hand at making this easy and popular recipe for a taste of Tunisia in your own home.
Tunisian Brik Recipe
Serves 4
- 5 oz can of tuna
- 2 tablespoons chopped parsley
- 2 tablespoons grated parmesan
- 4 eggs
- 4 phyllo sheets (or egg roll sheets)
- Olive oil
- 1 lemon, sliced into wedges
- Salt and pepper to taste
- Small onion, bunch of green onions, or shallot, chopped (optional)
Directions
- Heat half an inch of olive oil in a frying pan over medium-high heat on the stove.
- Mix tuna, parsley, onion, and parmesan in a small bowl. Season with salt and pepper.
- Place ¼ of the tuna mixture on a phyllo sheet. Crack an egg over the mixture. Fold phyllo sheet into a triangle.
- Fry the brik in heated oil until golden brown, about 2 minutes. Flip and cook on other side, then remove from pan.
- Repeat to make three more pastries.
- Serve with parsley and lemon wedge.
